    Chocolate Covered Strawberry Bundt Cake

    Happy Valentine's Day to you all! As a homage to all things fresh fruit (Lodi Certified Farmers Market is only TWO MONTHS AWAY!!), we are making a chocolate covered strawberry bundt cake to share with our special someones. This recipe is delicious, easy, and above all, sure to make your Valentine HAPPY. 

    3 C all-purpose flour
    3 oz. strawberry jello mix
    1/4 tsp baking soda
    1/2 tsp salt
    1 C salted butter, room temperature
    3 C sugar
    6 eggs
    2 tsp vanilla
    1 tsp lemon extract
    1 C sour cream
    2 C fresh diced strawberries

    Chocolate covering:
    1 C dark chocolate chips
    1 C heavy whipping cream
    1 tsp coconut oil

    Preheat the oven to 325 degrees and generously butter the inside of the bundt pan and dust with flour. In a bowl, mix the butter, sugar, vanilla, lemon extract, and sour cream. Once combined, sift in the cups of flour, jello mix, baking soda and salt to create the dough. Do not over mix! After the dough forms, fold in the freshly diced strawberries into the dough. Spoon the batter into the bundt pan and tap pan on the counter to release any air bubbles from your batter. Bake for an hour and twenty minutes, or until a tooth pick comes out clean. *TIP: you may need to cover the top with foil towards the end of the bake to prevent the bottom of your cake from discoloring. Let the cake cool in the pan for 10 - 20 minutes before removing and allowing to cool completely on a wire rack. 

    When the cake is cool, make your chocolate ganache. Warm the heavy whipping cream until near boil. Pour into a bowl of dark chocolate chips and coconut oil and whisk until the chocolate is fully melted and the mixture thickens. Spoon chocolate over the top of your Strawberry Bundt cake and serve! Feel free to add fresh strawberries for garnish.
