Recipe of the Week - Watermelon Strawberry Caprese Salad

Happy Farmers Market Thursdays, friends! We're excited to try this recipe for all the Fourth of July celebrations in the upcoming weeks. It's refreshing, it's unique, and sure to be the star side-dish for your friends and family.

And as a reminder, we are not hosting a Farmers Market on Thursday, July 4 and will resume the market on Thursday, July 11! 

Ingredients:
3 C watermelon, cubed
2 C strawberries, sliced
1 C crumbled Feta cheese
1/4 C extra virgin olive oil
1/2 C balsamic glaze (balsamic vinegar & brown sugar)
finely chopped basil to taste
salt & pepper to taste

Directions:
Cube approximately 3 cups of fresh, seedless watermelon and slice 2 cups of strawberries and set both aside. In a small saucepan, add 3/4 C balsamic vinegar and 2 teaspoons of brown sugar and stir constantly until the sugar completely dissolves. Bring to a low boil and then set aside to cool. In a large bowl, add the cubed watermelon, sliced strawberries, Feta cheese, olive oil, and salt & pepper. Drizzle the homemade balsamic glaze and finely chopped fresh basil over the salad and serve!
