Happy Wednesday, friends! This week, we are talking all the ways you can use peaches! These favorite stone fruits are so incredibly versatile. You can make them into cobblers, pies, tarts, in salads, grilled with honey or ice cream- and that's just off the top of our heads. But we were inspired to bring you a twist on peaches and we feel this recipe does just that. The grilled peach salsa is a perfect appetizer, snack, or as a topping over grilled pork chops. Pork is savory, and can be spiced up to be a delectable main course. Topped with this grilled peach salsa only brings out the meat's flavor AND makes for a unique dining experience. Give it a shot!

Grilled Peach Salsa
Ingredients:
3 ripe peaches, halved and pits removed
1 tbsp olive oil
1 tomato, diced
1 long red chili, finely chopped
2 tbsp balsamic vinegar
1 tsp garlic
1/2 C thinly sliced yellow onion

Preheat a chargrill pan or set your barbecue up too high. Bruch the peaches in olive oil then grill, cut side down, for about 2 minutes until peaches are warm and char marks appear. Remove from heat and roughly chop. Place in a bowl with the tomatoes, chili, garlic, onion, and balsamic vinegar. Serve with pita chips or top over grilled pork chops.
