Recipe of the Week- Cantaloupe & Prosciutto Skewers

Recipe of the Week- Cantaloupe & Prosciutto Skewers

Can you believe we're in AUGUST? Not sure about all of you, but this year has seemed to be longer than any other year before it. It was just yesterday we were starting the farmers market, yet here we are starting the last FOUR weeks. And since the weather has blessed us with a breezy high of 89 degree day, we thought we'd share a recipe to commemorate that- and this recipe is definitely easy breezy. Make it for a before dinner treat or a snack to have by the pool in the afternoons. Last we checked, Melon Prosciutto Skewers don't ever go out of style. Learn how to make these tasty Italian treats below.

Ingredients:
1 cantaloupe
a bunch of fresh basil leaves, washed
1 container mozzarella balls (ciliegine)
12-15 slices prosciutto
balsamic glaze

Halve your cantaloupe and clean out the seeds. Using a melon baller, scoop out about 24 balls and set aside on a tray. Arrange ingredients on a counter and start assembling your skewers. Layer cantaloupe, basil leave, mozzarella ball, prosciutto, and a second piece of cantaloupe onto a skewer and set aside. Repeat until all ingredients are skewered. Take the balsamic glaze and drizzle over the skewers for flavor and serve! And as always, you can get these ingredients TOMORROW at the Lodi Certified Farmers Market!
